If you're like my hubby and I this time of year then you have more zucchini than you know what to do with. Here's a treat for you. One of the best things about this (besides how outrageously good they taste) is you can grate the zucchini and freeze it to make these fritters in the depths of Winter when you are missing that sweet warm taste of Summer. Don't forget to SHARE this with your friends and family, this is one for the books!
