God's abundance is all around if we are just willing to open our eyes and look for it am I right? This will be my first year harvesting dandelions and I am so grateful that He has opened my eyes to the beautiful art of wildcrafting this year! Gosh I have so much to learn-but what a fun education it will be!

In 1956, Chauvin demonstrated the antibacterial effects of dandelion pollen, which may validate the centuries-old use of dandelion flowers in Korean folk medicine to prevent boils, skin infections, tuberculosis, and edema and promote blood circulation.

DANDELION FRITTERS with DANDELION SYRUP (See the live video and the dandelion health benefits post on my wall from yesterday!) I served them with Pan Basted Garlic and Rosemary Chicken and Zucchini :) FRITTERS 3/4 c Dandelion flowers, yellow leaves only 1 c flour 1/4 c ricotta cheese 1 egg 1 t baking powder 3/4 t salt 3/4 c milk Mix all. Let rest 10 minutes. Drop by heaping tablespoons into hot oil.over medium high heat! Cook about 1 1/2 minutes on each side. Drain on paper towels, salt to taste and serve hot. SYRUP 1/4 c Dandelion flowers, yellow petals only 1/4 c water 4 T honey (I used manuka for even more health benefits!
Simmer flowers and water in small pot COVERED for about 20 minutes. If you do not plan to use it all at once, strain liquid into clean container and discard petals. (No need to strain if you plan to eat it all!) Cool just slightly and stir in honey. Serve drizzled over fritters . Enjoy! Copyright Sherri Ohler 2020
